My Favorite Corner Cupboard

I adore this cupboard.  I was so happy when I saw it advertised at an antiques show that I was participating in.  Would you believe that I set up next to the dealer who had it!!!  Well, I had to wait two days to purchase it, as we were not allowed to buy before the public arrived.  Then I had to sell well, as I needed to have enough space in my van to move it home.  It all worked out and we used it for nerly thirty years.  Now it's time to pass it on.

A view from my kitchen window

Our kitchen window faces the West.  Sometimes I see a beautiful setting sun.  Sometimes I see a pretty faint one.  I love looking out this window~~~~

Wouldn't this make a delicious Christmas morning breakfast?

Broccoli and Italian Sausage Egg Muffins

Ingredients


1 pound Italian Sausage (sweet, mild, hot variety depending on your preference)
1 cup broccoli florets
8 large eggs
1/4 cup milk (or half and half depending on how you're feeling that day)
1/2 tbsp vegetable oil
1/2 tsp baking powder
salt & pepper to taste
Freshly grated Parmesan Cheese as needed

Directions


1. Preheat oven to 375 F.
2. In a large saute pan, over medium high heat, brown Italian Sausage for about 5 minutes, or until the sausage is no longer pink. Remove from heat and stir in broccoli.
3. Whisk together eggs, milk, oil and baking powder. Season with salt and pepper.
4. Lightly spray a 12-cupcake pan with oil.Spoon out the sausage and broccoli mixture evenly into each cupcake.
5. Ladle the egg mixture over sausage and broccoli.
6. Sprinkle with Parmesan cheese.
7. Bake for 15-20 minutes.









 I found these on Pinterest.  Wish I knew who to thank for them.  I can't wait to try them.  Thinking they might be good frozen too.  What do you think?  I'd definitely add some red pepper and/or hydrated dried tomatoes for color and added taste.

I baked Cupcakes Today

It's been a long time since I've baked cupcakes, something that I did a lot when our children were young.  These are chocolate fudge with a creamy frosting.  Then I used peppermint chips to adorn the top~~~yummy!

Nobody alerted me that I was in a pasture filled with bulls!




My daughter Kimbra, her husband, Tony, and son, Collin, are the proud owners of this happy group of farm animals.  Is that one of the tallest horses ever?  Her colt is well on her way to catching up with her mom too.  Then there's Betty and her calf.  Ruth the goat my be hiding somewhere too, but the rest are BULLS!!  I quickly left, upon this realization.  My daughter says they are reared with love; therefore they are all loving and not agressive.  The black and white calf is named *Spoticus*. The huge bull is Bob!!
