Wouldn't this make a delicious Christmas morning breakfast?
Broccoli and Italian Sausage Egg Muffins
Ingredients
1 pound Italian Sausage (sweet, mild, hot variety depending on your preference)
1 cup broccoli florets
8 large eggs
1/4 cup milk (or half and half depending on how you're feeling that day)
1/2 tbsp vegetable oil
1/2 tsp baking powder
salt & pepper to taste
Freshly grated Parmesan Cheese as needed
Directions
1. Preheat oven to 375 F.
2. In a large saute pan, over medium high heat, brown Italian Sausage for about 5 minutes, or until the sausage is no longer pink. Remove from heat and stir in broccoli.
3. Whisk together eggs, milk, oil and baking powder. Season with salt and pepper.
4. Lightly spray a 12-cupcake pan with oil.Spoon out the sausage and broccoli mixture evenly into each cupcake.
5. Ladle the egg mixture over sausage and broccoli.
6. Sprinkle with Parmesan cheese.
7. Bake for 15-20 minutes.
I found these on Pinterest. Wish I knew who to thank for them. I can't wait to try them. Thinking they might be good frozen too. What do you think? I'd definitely add some red pepper and/or hydrated dried tomatoes for color and added taste.

I baked Cupcakes Today
It's been a long time since I've baked cupcakes, something that I did a lot when our children were young. These are chocolate fudge with a creamy frosting. Then I used peppermint chips to adorn the top~~~yummy!

Nobody alerted me that I was in a pasture filled with bulls!
My daughter Kimbra, her husband, Tony, and son, Collin, are the proud owners of this happy group of farm animals. Is that one of the tallest horses ever? Her colt is well on her way to catching up with her mom too. Then there's Betty and her calf. Ruth the goat my be hiding somewhere too, but the rest are BULLS!! I quickly left, upon this realization. My daughter says they are reared with love; therefore they are all loving and not agressive. The black and white calf is named *Spoticus*. The huge bull is Bob!!

Snap Crackle Pop Go The Leaves Of Fall
Don't you love walking through the crisp, brittle leaves and hearing the sounds they make when they are crushed. Sounds a bit barbaric, but our feet are just helping the natural process along a bit quicker. I also love to save a few perfect ones and enjoy their beauty inside for a little while longer.

A 19th Century Rocking Horse
He arrived after a long, grueling day at auction. I wasn't sure I had done the right thing, bidding so high on a very old, very well loved and used horse. He wasn't even a real horse. Oh sure, you could ride him, if your were child, which neither my husband nor I were.
But~~~there was something captivating about this old guy. There was an instant friendship between us and I knew I had to take him home with me.
Now we are downsizing and he is in search of a new home, one that will offer him the same loving, respect that he has always received from our family. In repayment, he has always brightened our rooms with his presense!!

The Summer Of Our Discontent
This has been one HOT summer! After spending a long, cold, dreary winter indoors, most of us were ready to enjoy the outdoors. Hasn't happened!! I can barely stand to be outside more than a few minutes at a time in these high 90's temps! Here are some flowers that have managed to brave the elements.

Wishing All Mothers A Very Happy Mother's Day
Finally, we here in Michigan are enjoying some warm, sunny weather. Just in time for celebrating Mom's Day tomorrow. I'm playing with my gift: a brand new HP laptop computer. I think I'm going to love it, but I miss the familiarity of my 11 year old P.C. now. Changes are good and I know that once I let the memories go, I'll begin to feel comfy with this new *made for speed* wonder!!
